This is why I could never work from home full time. Knowing that a mountain of laundry requires my attention would prevent me from ever being productive at work.
Work like this demands an easy dinner...and a brief post. And so, I bring you...
Pizza Pasta
1 box penne pasta, cooked two minutes less than the recommended time
1 jar favorite pasta sauce
1/2 red, green, or yellow pepper, chopped
1 cup sliced mushrooms
2 whole cloves garlic, peeled
1 small package pepperoni slices
1 cup Italian sausage, cooked and crumbled
2 C grated provolone cheese
Penzey's pizza seasoning
In a saute pan, heat some olive oil and throw in the garlic cloves, peppers and mushrooms. Cook for about 5-7 minutes. Spread the penne in a greased 13x9 baking dish, toss with the vegetables, pepperoni and sausage. Add the entire jar of sauce and mix well. Bake at 350 degrees for fifteen minutes, then top with the provolone cheese, sprinkling that with the pizza seasoning. Bake for another fifteen minutes. You can add any of your favorite pizza toppings to this dish-olives, onions, whatever floats your boat. It's a great dish to take to someone who's been laid up, you can even bring it unbaked-just top it with the cheese and spices-and they can refrigerate it for a few days before baking.
